Elderflower Cordial

Ingredients

  • 1 liter of water
  • 1 1/2 cups dried elderflowers*
  • 1 1/2 tsp citric acid*
  • 1 lemon, peeled and juiced
  • 3 lbs allulose* powder

Instructions

  1. Add the water, the elderflowers, and the citric acid to  a medium-sized pot over medium-high heat. 
  2. Using a vegetable peeler, remove just the yellow skin of the lemon and add to the pot
  3. juice the lemon and add the juice to the pot
  4. Bring to a boil; remove from heat and allow to steep for 4-24 hours
  5. Strain the slurry through a fine sieve or several layers of cheesecloth into a medium-sized pot, being sure to press as much liquid out of the solids as possible.
  6. Pour elderflower liquid into a large sauce pan and add the allulose
  7. Heat on medium-high and bring to a boil
  8. Turn the heat down and simmer the liquid for 20-30 minutes, or until it is reduced by half.
  9. Pour into glass swing-lid bottles* (or other non-reactive container with a tight-fitting lid) and refrigerate

Notes

  • Shake container well before using as there may be separation.
  • Elderflower cordial will keep in the refrigerator for up to 8 weeks. 
  • Cordial may be frozen in small ice trays for later use. Place the frozen cubes into a freezer bag and freeze them for up to 6 months.

Simple Syrup

Instructions

Ingredients:

  1. 2 cups of water
  2. 2 cups of monkfruit sweetener*


Directions:

  1. Simmer over medium-high heat , stirring frequently.
  2. When all sweetener crystals have dissolved, simmer for another 5 minutes
  3. Take off of the heat and set aside to cool
  4. Store in 16 oz swing-lid glass bottles*
  5. Refrigerate for up to 1 year


For long-term storage: 

  1. Freeze in ice trays until frozen solid
  2. Remove frozen cubes from trays and place into a freezer bag
  3. Store in the freezer for 12-18 months
  4. Discard if they have that "freezer burnt" smell or taste

Keto Creme de Cacao

Enjoy this delicious favorite and stay keto!

Ingredients:

  • 8 fluid oz of 80-proof vodka
  • 3 ½ fluid oz sugar free dark chocolate sauce*
  • 1 fluid oz sugar free simple syrup* (my recipe is here)
  • Swing-top 16 oz glass bottle*


Directions:

  • Combine ingredients in the 16 oz swing-top bottle
  • Close the lid securley
  • Shake until thoroughly combined
  • Will keep for 1 year in the refrigerator, 6 months on the countertop

Toasted Coconut

Perfect as a garnish or for glass rimming!

Ingredients:

  • 1 cup unsweetened coconut*


Supplies: 

  • Large cookie sheet*
  • Spatula*


Directions:

  1. Preheat oven to 350F (175C)
  2. Spread coconut evenly over an ungreased cookie sheet. Transfer baking sheet to 350F (175C) preheated oven and cook for 5 minutes (Note: if you are using a very dark or black baking sheet, cook for only 4 minutes)
  3. Remove from oven and use a spatula to turn/stir the coconut, once again redistributing evenly over the baking sheet 
  4. Return to 350F (175C) oven and bake another 5 minutes (Note: if you are using a very dark or black baking sheet, check after 4 minutes)
  5. If coconut is not adequately browned, return to the oven in 2 minute increments, stirring in between, until coconut is toasted to your liking

Allow coconut to cool before using.

Store in an air-tight container for up to 6 months.

Keto Honey Syrup

Ingredients:

  • 10 oz Mrs. Taste Honey-Free*
  • 10 oz boiling water
  • 16 oz swing-top glass bottle*


Supplies: 


Directions:

  1. Pour Honey-Free syrup into your container
  2. Pour in 10 oz of boiling water
  3. Close lid
  4. Shake vigorously until the Honey-Free is completely dissolved in the water


Store with the lid tightly closed in the refrigerator for up to 3 months
